I haven't got much experience of getting stuff sent over from abroad and was after a bit of help regarding customs fees.
I'm getting a watch sent over from an Ebay seller - he is sending UPS insured delivery. How does he need to mark the parcel down to avoid any fees?

probs lower than $50.. Id say anything over is a gamble. Its a gamble if you don't get it insured aswell mind as if it goes missing your borked.

the seller says he'll have to insure it to it's value of $200...is there no way of avoiding fees then if it's insured to a value as high as this?
can he not just mark it down as a $200 gift?

just tell him to send it recorded and fuck the insurance....id rather risk the 0.000000000000000000011111 million to one chance it will get lost than pay this government any money to purchase something from abroad.

Would we all agree this is the best way to look at 4 or 5 shipments, each worth £600-£1000, coming from the States? If not, what sort of fees will I be facing if stung? Or do risk less/potentially save more if I get the senders to split the packages up?

The HMRC duty is linked to tha value he will state so get him to write this:
"SAMPLE - NO COMMERCIAL VALUE" and to fill in the monetary value as $1.
If anyone asks you are being sent it by someone you are condsierding representing as a sales agent in the UK.
The risk of losing it in the US postal system are minimal, get it recorded.

What does the sender mark as the value (the boots are over 300) and does he mark as a gift or purchase?

Need to ask because not sure where I stand. I brought something from Grandism and asked in an email if they could mark the item as gift and value as $40 which they replied back they said they will. However,item arrived and I was landed with a charge so you reckon I can complain or just choke the fees up?.

You have no right to complain, they didn't or just forgot to help you out. Just looked them up and Grandism seem to be based in Switzerland, so not part of EU.

No they didn't mark it as a gift or the value I asked but I did ask them specifically twice when my order was processed if they could and both times yes. I guess I suck it up.
