The people.

Bollocks ! One of the most unique aspects of any city in Europe and its 10000% worth a visit. You ever been to Berlin? Easily top 3 cities in the world and it’s what you’ve just described

Go to Omar or Safari (same owner). Cool restaurants with decent pricing, lots of natural wine. You need to book at table in advance.
In general a lot of restaurants serve natural wine now - too many for my taste.

Den Vandrette, central CPH - all out natural wine bar. Good location to go for a walk along the canals after or before.

Sabotøren, Nørrebro district - all natural wine also as far as I recall.

Volatil, Vesterbro district - maybe more of a shop but you can sit down and share a bottle too.

Spend a fortune but worth it if you love meat and beer.
