They have all been popped yeah, as far as I can see they look the same in terms of construction as the workaday ones. The caption suggests that they are too.. Collars have probably been popped just to show how the under-collar material/colour differs from the rest of the jacket. No other images nah, had a look on Nepenthes blog too but couldn't see anything about em.

I'd say go true, they feel quite rigid and boxy at first if you don't get a version that's been laundered first (which The Bureau do), but they soon soften up and fit a little better. I'm probably in between a L and XL in a lot of things and went with a L, just depends on your personal preference, they should have measurements on the the site too so check against that.
