Not quite sure what you mean by roping?
If you mean the hems have a worn effect then any decent tailor can just reattach the hems, so you still have the same finish.
If you mean chain stitching then get yourself to Son of a Stag in London, they will do chainstitch, bit more than a standard shortening at £20 but worth it to have a proper finish . Got a couple of pairs of Bicester RRL bargains taken up by them, really nice staff and quick service. They also said they'd do a mail order service although that would make it pretty pricey, worth it for expensive jeans though.

never knew you could get hems reattached, surely there's gonna be some discontinuity depending on the wash/ how much you take the leg up by though - can't image there being many instances where this would work well?

Mine were quite a heavy wash with frayed hems.
Instead of cutting off some material and turning them up again, they cut some off then sew the old hem over the top.
The ones I had done looked great on but messy turned up, a better tailor could make them ok both ways but if you want to avoid turn ups it wouldn't matter.
If you pm me tomorrow ill take a pic of these ones I had done.

Don't get this done. Its just a bodge job really. Proper places can recreate the hem instead of using the old one.

Denim Doc and Fast Stitch for example.

By the denim doctor do you mean http://www.thedenimdoctor.co.uk/?
Because the pics they show for this clearly show they do a "bodge job" as you describe it Laughing out loud
