Why? They wont show up in my normal contact list, only show if you go to options then sim directory

because most modern phones save multiple numbers and contact info such as emails under one persons contact ie so you'll have

Mob :******
work:——
Home:……
email…..
When you save to Sim it saves all the numbers as individual contacts so you end up with 4 or 5 entries for each person.
Best way is to sync your old phone with your PC (Outlook) and then sync your new phone to transfer all the contacts that way.

check your old phone doesn't have the option to send all via bluetooth. Often the easiest way other than using your PC. Just helps to back your numbers up to your PC in case you lose your phone.
N95 may be a bit technical for you
