If it's lamb steaks best way to do it would be in a hot griddle pan for 3 or 4 minutes each side mate. You get more flavour than roasting imo. Make sure you leave them rest for a few minutes out of the pan before serving.
Can never go wrong with garlic and rosemary to season Lamb.

stoney - prep your veg, par boil, season and coat with a little olive oil and whack it in the oven with some sprigs of rosemary. 20 -30 minutes later (depends what veg, size, etc) sear the lamb in a pan with a little oil - a good pan with a heavy base - and pop the lamb in the oven too. don't clean the pan.
turn the veg.
when all is just about done, put some red wine in the pan and add a good tablespoon of redcurrant jelly and stir to dissolveā¦let it reduce, season, all you're all done.
