They look a bit horrible, I think it's the colour, I know they will taste nice but I can't get past the way they look. I've always had this problem with Chinese dumplings.

i try and slice my potatoes as thinly as poss.. in a thick dish with cream, white wine and gruyere cheese. watch it in the oven until it's proper golden crust on top.

don't think it's technically dauphinois but it's brilliant.

Slicing the potatoes took forever and it took so long to cook, was really nice though. I should have nuked the slices of potato first, it was already in the oven though.

indeed - you really need a mandolin / machine to get em thin enough. if hand cut, it's best to nuke 'em, or like you say, it takes forever to cook.

par boil the potatoes before you slice them.

Cooking dauphinoise from raw takes (literally) all day.
